Good, I hope. My intentions and goals for 2018 were very clear. I’ve always felt like resolutions or goals, whatever you call them, are personal. At least for me anyways. But I will share a bit with you because we’re cool like that. One of the things that stand at the forefront for me this year is to take action. To take action with things that have been on my mind, things that I’ve neglected, and things that have prevented me from living my best life.
If you’ve been keeping up with this blog, you’ll know that I’ve already shared with you bits about my personality. As an introvert and an obsessive analytical freak, I often get in my own way. I overthink everything and it keeps me from growing and experiencing new things. So I’ve set out this year to stop over analyzing and put action behind the goals that I have. I’m not a huge drinker but every now and then I do love a good cocktail. But it has to taste delicious with a sweet kick. I’ve been playing around with different cocktail recipes lately and this pomegranate pineapple shrub mojito is one of my absolute faves! Now I know you’re probably thinking what is a shrub, right? Glad you asked. A shrub is a fruit syrup, preserved with vinegar and mixed with water or alcohol to make a tangy and refreshing beverage. This pineapple shrub from Crafted Cocktails is an all-natural, aromatic cocktail enhancer made from pineapple, vinegar and agave.

- 1 oz Pineapple Shrubs (Crafted Cocktails)
- 1 oz silver rum, like Bacardi Silver
- 3 oz pomegranate Italian soda
- ¼ cup pineapple chunks
- 1-2 tbsp pomegranate arils
- handful of fresh mint leaves
- club soda, to top off cocktail
- crushed ice
- Muddle (crush) pineapple chunks and mint leaves in glass.
- Add pineapple shrub, rum, and pomegranate Italian soda to glass.
- Add crushed ice, pomegranate arils, and top drink off with club soda.
