I can’t believe this is the first popsicle recipe I’ve done on the blog. My popsicle mold has been sitting in it’s box for well over a year and I thought it was time since it is popsicle week of course.
I recently got back from Orlando where I attended the BlogHer conference- conference recap coming soon! I must admit, I’ve been MIA from this blog of mine for a few months now. Life is crazy, friends. When 2017 first started I just knew it was going to be my year. You know what they say though, “when you make plans, God laughs” or something like that, right? I’ve been in a season of my life where I am going through so many different things.
I’m learning about myself- I mean you would think a 29 year old would know all about herself already but nah. For most of my adult life, I was in a long term relationship where my primary focus was not always on myself. Now that I am not in a relationship, I find that I am really getting to know who I am, what it is I want in life, and trying my damnedest to execute all the things. I’ve also been experiencing a variety of emotions and if you know me, me and emotions are not synonymous. I’m not one to show emotions in front of others and I like to think of myself as Bree (from Desperate Housewives); usually always composed and rarely expresses emotion. Don’t get me wrong, I’m not a robot. I have it in me, I think because I don’t trust easily, I heavily guard myself. One of the things I love about this little blog is that I can easily fuse together my love for food and connect with you guys. I’ve shared on my social media accounts that I’m a big time introvert and many of you have reached out to me to share your stories as well. And that truly makes my day, friends.
Today I’m sharing these vegan cherry coconut popsicles with you. They’re refined sugar free, creamy, refreshing, and all that jazz. I’m no vegan but from time to time, I like to incorporate vegan and/or plant-based meals into my diet. I love that these popsicles contain 3-ingredients, most of which I’m willing to bet you have in your house already. Now that summer is officially here, you can enjoy these poolside while in your unicorn floaty and not feel guilty about a thing!
- 2 cups fresh cherries; pitted and halved
- 1 can (13.5 fl oz) full-fat coconut milk
- 1-2 tsp pure maple syrup
- Pit and halve the cherries.
- Place cherries, coconut milk, and maple syrup into blender/food processor.
- Blend until all ingredients are fully incorporated.
- Pour mixture evenly into popsicle mold.
- Let freeze overnight or at least for 6-8 hours and enjoy!
