Description

These pumpkin waffles are likely the best you’ve ever had! Made with buttermilk and warm spices that yield tender and flavorful waffles. Go on a fun adventure with four different tasty toppings to pair with your pumpkin waffles!


Ingredients

  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon kosher salt
  • 2 large eggs
  • 1/4 cup light or dark brown sugar
  • 1 cup pumpkin puree (not pumpkin pie mix!)
  • 1 1/2 cups whole buttermilk
  • 6 tablespoons unsalted butter, melted and lightly cooled
  • pure maple syrup, for serving


Instructions

  1. In a small bowl, combine the dry ingredients together: flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Whisk together to combine and then set aside.
  2. In a large bowl, whisk together the eggs and brown sugar. Then add in the pumpkin puree and buttermilk, whisk everything together to fully combine. 
  3. Add the dry ingredients into the wet ingredients and use a rubber spatula to fold everything together until just combined. Lastly, pour in the melted butter and fold together just until the butter incorporates within the waffle batter.
  4. Heat up your waffle maker according to the manufacturers instructions. Once waffle maker is hot, lightly spray with cooking spray and pour batter in leaving a 1-inch border as batter will spread out.
  5. Cook waffles until golden brown and lightly crisp, about 3-5 minutes depending on your waffle maker. Place cooked waffles onto a wire rack, in a single layer, and repeat the process until all waffle batter is cooked.
  6. Serve waffles immediately with extra butter and maple syrup, if desired. Enjoy!
