Description
This Cajun Sheet Pan Dinner features juicy, caramelized andouille sausage, roasted peppers, brussels sprouts, and butternut squash. Bring everything together on a sheet pan and let the oven do the rest! A quick + zippy honey mustard glaze is the finale to pour over or serve with this easy, family-friendly dinner. So cozy and comforting!
Ingredients
- 24 ounces andouille sausage, cut into links
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 12- 16 ounces brussels sprouts, halved
- 2 heaping cups cubed butternut squash
- 1 tablespoon Creole Cajun Seasoning– homemade or store-bought
- Kosher salt & fresh ground black pepper- to taste
- 2 tablespoons fresh chopped garlic
- 3 tablespoons olive oil
- Crusty baguette or French bread, for serving- optional
For the honey mustard sauce:
- ¼ heaping cup dijon mustard
- ⅓ cup pure honey
- 1 tablespoon pure maple syrup
- ½ – 1 teaspoon Creole Cajun Seasoning– homemade or store-bought
Instructions
- Preheat the oven to 425°F. I recommend using a large nonstick baking sheet for this recipe, but feel free to use a regular large baking sheet.
- On one surface, cut about 6 slits into the andouille sausage links, careful not to cut too far down to avoid splitting the links. The slits will ensure even cooking and a crisper texture.
- Arrange the sausage links, sliced bell peppers, brussels sprouts, and butternut squash on the baking sheet. Then season the ingredients with Cajun seasoning and salt/pepper to preference. Add the chopped garlic and drizzle with olive oil. Use your hands (fitted with disposable gloves if desired) to toss everything together very well, ensuring that every element is coated with oil and seasonings.
- Bake the sheet pan at 425°F for 35-40 minutes- gently flip/toss the ingredients at the halfway mark to make sure every surface is roasting/crisping up beautifully.
- Meanwhile, prepare the honey mustard sauce: In a bowl, combine the mustard, honey, maple syrup, and Cajun seasoning. Stir well to fully combine. After the first roast, drizzle half of the honey mustard sauce over everything and place it back into the oven. Continue roasting for 10-15 minutes. Then let the sheet pan rest for 10 minutes.
- Serve the Cajun sheet pan by dividing the elements onto serving plates. You can drizzle the remaining honey mustard sauce over portions or divide the sauce into small vessels for dipping and serve with crusty bread on the side, if desired. Enjoy!
