Description

This Zucchini Feta Meatloaf recipe features a mixture of ground turkey + chicken, heaps of shredded zucchini, feta cheese, and spices. Listen, if you’re a meatloaf hater, I strongly implore you to give this recipe a try. The end result is juicy, flavor-loaded meat with hidden veggies and salty feta lathered up in your favorite BBQ sauce. It’s a weeknight staple or anytime dinner that the whole fam will enjoy!


Ingredients

  • 1 lb ground turkey
  • 1 lb ground chicken
  • 2 large eggs
  • ½ cup plain panko breadcrumbs
  • 2 tablespoons Creole Cajun Seasoning– homemade or store-bought
  • 1 teaspoon onion powder
  • Kosher salt & fresh ground black pepper- to taste
  • 1 tablespoon fresh chopped parsley, plus more for garnish
  • 1 tablespoon garlic paste
  • 1 teaspoon dijon mustard
  • 7 ounces feta cheese, crumbled
  • 1 ½ cups finely shredded zucchini, squeezed dry
  • 1 tablespoon worcestershire sauce
  • ⅓ cup BBQ sauce, plus more as desired- we love Stubb’s or Kinder’s

Instructions

  1. Preheat the oven to 375°F. Line a large baking sheet with foil or a piece of parchment paper.
  2. In a large mixing bowl, combine the ground turkey + ground chicken and use your hands (fitted with disposable gloves if desired) to mix the meat until just combined. Then add the eggs, breadcrumbs, Cajun seasoning, onion powder, salt/pepper to taste, parsley, garlic paste, dijon mustard, feta, shredded zucchini, and worcestershire sauce. Then use your hands to mix again until all ingredients are just combined.
  3. Transfer the meat mixture to the prepared baking sheet. Coat your hands with a bit of olive oil (helps to prevent sticking) and then pat the meat mixture into an 11×6-inch rectangle. Brush half of the BBQ sauce over the meatloaf and set the remaining sauce aside.
  4. Bake the meatloaf at 375°, uncovered, for 50 minutes to 1 hour or until the meatloaf registers at 160°F when checked using an internal thermometer.
  5. Brush the remaining BBQ sauce over the finished meatloaf and garnish with fresh chopped parsley, if desired. Slice into wedges and serve immediately alongside your favorite sides. Enjoy!
