Now, I’m not above grabbing me a box of Eggo’s from the store every now and then, but homemade waffles cannot be beat. I have a classic buttermilk waffles recipe that’s clutch. Then there’s my pumpkin waffles for some seasonal flair. Ahem, I introduce to you these brown butter waffles with macerated peaches.
Nutty and fragrant brown butter adds a lil’ razzle dazzle that sings in this recipe. These waffles are super tender and beaming with so much flavor. Listen, the waffles alone are swoon-worthy but let’s get into that macerated peach topping!
Peaches are mixed together with a few simple + quick ingredients to elevate the fruit. The end result, tender and flavorful waffles topped with extra juicy, warmly-spiced peaches…yes plz! All of the flavors here work so well!

What Does Macerated Mean?
Great question! Macerated fruit is a means in which fresh fruit is commonly combined with citrus juice, sugar, and other flavorings. The process allows for the natural juices to be drawn out from the fruit. After sitting for some time, the peaches take on a luscious, syrup-like texture where the flavors meld and intensify. These macerated peaches are the easiest and pure chef’s kiss, gah.
How To Make Brown Butter Waffles with Macerated Peaches (it’s sooo easy, let’s look):

- For the macerated peaches: In a medium bowl, combine the sliced peaches, lemon juice, sugar, cinnamon, vanilla/almond extract, and salt. Gently toss to combine. Cover the bowl and set aside until the waffles are done.
- Brown butter. Add the butter into a medium saucepan over medium-low heat. Browning butter takes about 7-10 minutes until it turns deep brown and has a nutty aroma with brown bits on the bottom. Once achieved, remove from heat and set aside to cool.
- Bring waffle batter together. In a large bowl, combine the flour, brown sugar, baking powder, salt, and cardamom, and whisk the dry ingredients well to combine. Then make a well in the center of the ingredients and add the milk, eggs, vanilla + almond extracts, and slightly cooled brown butter. Use a rubber spatula to stir the batter until just combined.
- Cook waffles. Heat up a Belgian-style waffle maker (this is the one I own & love!). Once the waffle maker is hot, lightly coat with nonstick spray. Ladle some of the batter over the waffle grid(s), close the lid, and cook for 4-5 minutes (depending on your waffle maker) or until the waffles are golden brown and slightly crispy. Transfer cooked waffles to a baking sheet fitted with a wire rack. Repeat the process with remaining batter.
- Serve. For each serving, top with the macerated peaches. Garnish with chopped pecans and serve with butter and maple syrup, if desired. Enjoy!
Tips + Tricks, Recipe Substitutions & More
Here’s some extra info you might find helpful for this waffle recipe:
- Switch up the fruit– Juicy peaches on top of these brown butter waffles are the very best pairing, y’all. However, feel free to swap peaches for sliced strawberries, blackberries, raspberries, or a combination of fruit.
- Gluten-free needs?– Use any gluten-free baking flour here as a 1:1 ratio (we love Bob’s Red Mill gf flour!). Additionally, you can also use whole wheat flour here if you’d like (big fan of King Arthur’s white whole wheat flour).
- Don’t stack waffles!– Stacking them right after they’ve cooked will yield soggy waffles, oof. Instead, as you cook, place each waffle in a single layer on a wire rack to allow the steam to breathe/ventilate.
- How to keep waffles warm– Lay the waffles in a single layer on a large baking sheet fitted with a wire rack. Then place them in the oven (right around 200°F) until ready to serve.
- Garnishing your waffles– I recommend some chopped pecans for a crunch you’ll love. However, chopped walnuts or almonds will be just as nice. Also, I recommend a light dusting of powdered sugar, softened butter, and plenty of maple syrup for serving to add an extra delicious touch.
How To Store Brown Butter Waffles
First, make sure leftover waffles have cooled completely. Keep your waffles stored inside of any airtight container or large freezer-safe, plastic bag with a piece of parchment paper in between each waffle so that they don’t stick together. I recommend keeping them inside of the freezer (as opposed to the fridge) and then reheating in a toaster/toaster until warmed through. These waffles will keep in the freezer for up to 2 months. Yay.
Storing Macerated Peaches 🍑
Once mixed together, the macerated peaches will keep for up to 1 day when stored, covered, inside of the refrigerator. Pssst, if you have any leftovers, these peaches are great with some yogurt and granola (& over the waffles), too!

Ingredients
For the macerated peaches:
- 2 large ripe peaches, pitted & sliced
- 2 teaspoons fresh lemon juice
- 3 tablespoons granulated sugar
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla or almond extract
- pinch of salt
For the brown butter waffles:
- 1/2 cup (1 stick) unsalted butter
- 2 1/4 cups all-purpose flour
- 1/4 cup packed light or dark brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cardamom
- 2 1/4 cups whole milk (or milk of choice)
- 3 large eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
For serving:
- butter, maple syrup, powdered sugar & chopped pecans, if desired
Instructions
For the macerated peaches:
- In a medium bowl, combine the sliced peaches, lemon juice, sugar, cinnamon, vanilla/almond extract, and salt. Gently toss to combine. Cover the bowl and set aside until the waffles are done or you can store them in the refrigerator for up to 1 day.
For the brown butter waffles:
- Brown butter. Add the butter into a medium saucepan over medium-low heat. Once the butter melts, it will get foamy and you will hear it bubbling as it cooks. Then it will take on a clear, light golden color. Note: Do not leave the pot unattended during the browning process (takes about 7-10 minutes) as it can burn very quickly. Stir the butter every so often, scraping up any bits as you stir. Then the butter will turn deep brown and have a nutty aroma with brown bits on the bottom. Once achieved, remove from heat and set aside to cool.
- Bring waffle batter together. In a large bowl, combine the flour, brown sugar, baking powder, salt, and cardamom, and whisk the dry ingredients well to combine. Then make a well in the center of the ingredients and add the milk, eggs, vanilla + almond extracts, and slightly cooled brown butter.
