  • Italian sausage: Any ground Italian sausage (hot or mild) you’d like or Italian sausage links with the casings removed, boom.
  • Shallot: The sweet delicate bite from a shallot is so nice.

  • Spices: I use dried oregano, salt, and pepper.
  • Whole, peeled tomatoes: We’re going to hand-crush the whole, peeled tomatoes directly into the pot until they’re nice and jammy. I’m a big fan of San Marzano tomatoes because they’ve got a good flavor and quality to them, and they grow from a specific region of Italy.
  • Fresh basil: Pops of herbaceous basil add fresh flair, mmm.
  • Anellini pasta: The famous, signature pasta shape for spaghetti-o’s, friends! They look like little rings, anellini means “rings” in Italian.

How To Make This Pasta Dish:

  1. In a large dutch oven over medium heat, add the oil. When hot, add in the sausage and use a wooden utensil so break up the sausage. Continue cooking the sausage until completely browned, about 7-8 minutes.
  2. Then add in the chopped shallot and continue cooking along with the browned sausage until the shallot softens, about 1-2 minutes. Add the garlic and continue cooking for another 1 minute until fragrant, stirring well to combine with the sausage mixture. Season the sausage mixture with the oregano and salt/pepper- to taste.
  3. With your hand over the pot, pour some of the peeled tomatoes in your hand and crush them as much as you can before adding them into the pot. Continue this process until all tomatoes have been added into the pot along with any sauce in the can as well. Then add in the chopped basil. Stir the mixture until well combined.
  4. Add the dried pasta into the pot, tossing to briefly combine with the meat mixture. Then pour in the chicken stock/broth to cover, stir well to fully combine. Reduce the heat to medium-low, and cover. Cook the pasta according to your package directions until the pasta is tender.
  5. When pasta is cooked through, remove from heat. Add in the butter and stir well to combine. Evenly divide the homemade spaghetti-o’s in serving bowls, and garnish with all the freshly grated parmesan you can handle!

  • Can I use other pasta? Anellini is the star of the show for a true spaghetti-o’s dupe, but feel free to use any short-cut pasta of choice. For example, orecchiette, farfalle, penne, or casarecce to name a new.
  • Can I omit the sausage? Yes! You’ll likely need 1 tbsp of oil (instead of the 2 written in the recipe card) to sauté the shallot and proceed with the recipe.
  • Can I use other meat? The flavor of Italian sausage here is bomb. Although, you can def substitute with ground beef, ground turkey, or ground chicken if you’d like. Depending on the amount of fat in either one, you might need to drain or blot excess liquid after browning.
  • I want my spaghetti-o’s to have a soupy consistency: When the pasta cooks up, it releases its starches and therefore thickens the dish in the process. I find 3 cups of stock/broth to create a nice creamy/slightly thick spaghetti-o’s. If you prefer a soupy/looser consistency, simply add in more warm stock/broth until the texture is perfect for ya.

  • 2 tablespoons olive oil
  • 1 lb ground Italian sausage (or links with casings removed)
  • 1 small shallot, finely chopped
  • 1 tablespoon garlic paste (or 6 garlic cloves, finely minced)
  • 2 teaspoons dried oregano 
  • Kosher salt & freshly ground black pepper- to taste
  • 1 (28-ounce) can whole peeled tomatoes (I use San Marzano)
  • ¼ cup fresh chopped basil
  • 1 lb dried Anellini pasta (or any short-cut pasta)
  • 3 cups chicken stock or broth, plus more as needed
  • 2 tablespoons butter
  • Fresh grated parmesan, for serving- optional

Instructions

  1. In a large dutch oven over medium heat, add the oil. When hot, add in the sausage and use a wooden utensil so break up the sausage. Continue cooking the sausage until completely browned and slightly crisp, about 7-8 minutes.
  2. Then add in the chopped shallot and continue cooking along with the browned sausage until the shallot softens, about 1-2 minutes. Add the garlic and continue cooking for another 1 minute until fragrant, stirring well to combine with the sausage mixture. Season the sausage mixture with the oregano and salt/pepper- to taste.
  3. With your hand over the pot, pour some of the peeled tomatoes in your hand and crush them as much as you can before adding them into the pot. Continue this process until all tomatoes have been added into the pot along with any sauce in the can as well. Then add in the chopped basil. Stir the mixture until well combined. Note: I also like to use a potato masher to break down the tomatoes a little more, just a few strokes, until they’re nice and jammy- totally optional.
  4. Add the dried pasta into the pot, tossing to briefly combine with the meat mixture. Then pour in the chicken stock/broth to cover, stir well to fully combine. Reduce the heat to medium-low, and cover the pot with a lid leaving a slight gap. Cook the pasta according to your package directions, about 15-17 minutes or until the pasta is cooked.
  5. When pasta is cooked through, remove from heat. Add in the butter and stir well to combine. Feel free to add in more warmed stock/broth if you’d like a thinner consistency.
  6. Evenly divide the homemade spaghetti-o’s in serving bowls, and garnish with lotsa freshly grated parmesan, if desired. Enjoy!
