Apricot snacking cake?
Say what now? I’ll be the first to admit that the idea of a “snacking cake” makes me giggle. I mean, could we really justify a cake as a true snack tho? Why yes, we sure can! If only I could have convinced Mom while I was growing up that this was an actual thing, ha! Okay, let’s get into this recipe already…
What Is A Snacking Cake?
The general premise of a snacking cake is a cake that is typically easy to make (i.e- one bowl), baked in one pan (like a cake pan, sheet-cake style, etc.), and/or also contains minimal/simple ingredients. Therefore, a snacking cake should be easy peasy and fuss-free. Additionally, you can think of a snacking cake as an informal kind of cake. A commonly known snacking cake is the famous Texas sheet cake.
Apricot Snacking Cake Ingredients
- all-purpose flour
- baking powder
- kosher salt
- eggs
- sugar
- apricot preserves
- oil
- goat milk yogurt
- vanilla extract

How To Make This Apricot Cake
(Note: the full ingredients list, including measurements, is provided in the recipe card, directly below.)
For starters, I baked this apricot snacking cake in a 9-inch round cake pan.
- In a large bowl, combine eggs, sugar, oil, yogurt, vanilla extract, apricot preserves, and whisk together.
- Then, add in flour, baking powder, salt, and stir in until just combined.
- Bake at 350°F for 45 minutes or until toothpick inserted in the center of cake comes out clean.
Can I Use Apricot Jam/Jelly Instead?
I wouldn’t recommend this. Jams/jelly contain more fruit juice rather than actual fruit itself because of how they’re made. Preserves have more of the actual fruit in them in a gel/syrup consistency (more fruit chunks) than jams/jellies. The use of apricot preserves gives this cake a more true delicious apricot taste.
Does This Cake Have Icing/Frosting?
This apricot cake does not have icing or any kind of frosting on top. Instead, I added a nice smear of more yogurt on top to keep it lightweight. Since the apricot flavor is sweet-ish already, the yogurt adds a light creamy tang as a contrast. The overall flavor is amazing y’all! However, feel free to add frosting if you prefer.
Lastly, I’ve garnished this cake with dried apricots for texture and fresh mint leaves for a pop of color. This cake is truly a new fave of mine as it’s so easy to make and just a really great cake to make anytime!

Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup canola oil
- 1 cup Redwood Hill Farm plain goat milk yogurt, plus more for topping
- 1 teaspoon vanilla extract
- 1/2 cup apricot preserves
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon kosher salt
- optional: dried apricots and fresh mint leaves for garnish
Instructions
- Preheat oven to 350°F and generously grease a 9-inch round cake pan with baking spray.
- In a large bowl, combine eggs, sugar, oil, yogurt, vanilla extract, apricot preserves, and whisk until fully combined.
- Add in flour, baking powder, salt, and stir together until just combined. Batter should be somewhat runny. Pour into prepared baking pan and bake for 45 minutes or until toothpick inserted into the center of cake comes out clean.
- Let cool for 10 minutes and invert cake onto a large plate. Garnish as desired. Enjoy!

- Cake will keep in refrigerator, wrapped in plastic, for up to 3 days.
