I’m loving this time of year something serious, y’all. All of the delicious coziness, the weather changing, and the seasonal goodness. I know the holidays are upon us, and a lot of folks are beginning to plan their Thanksgiving menus and all. However, while the holidays are nice to look forward to, I’m still excited to continue sharing everyday recipes with you.

Ya girl is a huge sports fan, and this time of year is full of basketball, football, and more. As such, I’ve been leaning into all the apps and snacks and am obsessed with these baked potato wedges…let’s chat about this one!

  • Russet potatoes: The preferred potato variety for wedges, boom.
  • Duck fat: Adds so much flavor and richness.
  • Cajun seasoning: My homemade Creole Cajun seasoning is a household favorite. It’s a well-rounded, bold spice with an array of seasonings. Make my homemade version or use store-bought Cajun seasoning for these potato wedges.
  • Baking powder: The perfect touch to amplify crispiness.
  • Salt & pepper: To round out the Cajun seasoning.

Homemade Blue Cheese

If you’re anything like me, I know you appreciate a good sauce to go along with your potato wedges. Every sturdy potato wedge needs a dip for dunking, duh. And friends, I sure do hope that you’re not a blue cheese hater because this scratch-made blue cheese sauce is insanely good, y’all! It’s super easy to make and incredibly flavorful.

How To Make These Crispy Baked Potato Wedges:

  • Preheat the oven to 425°F and line a large baking sheet with foil or parchment paper, and then top with a fitted wire rack.
  • Prep the potato wedges: In a large bowl, combine the potato wedges, duck fat, baking powder, and spices. Then toss the potato wedges with the mixture until the surfaces are fully coated. Then arrange the potato wedges on the prepared baking sheet.
  • Bake the potato wedges for 40 minutes or until the wedges are fork-tender and crispy.

Tips + Tricks & More Recipe Notes:

  • Duck fat substitute: If you can source duck fat, I highly recommend you do. However, feel free to use unsalted butter or olive oil as a 1:1 sub if you’d like.
  • Can I make these in the air fryer? Yes! Though you’d have to work in batches. Preheat the air fryer to 400°F. Prep the potato wedges exactly as written in the recipe card below. Lay the wedges in the basket and cook for 10 minutes. Then flip and continue cooking for an additional 5 minutes until fork-tender and crisp. Repeat to cook the remaining wedges.

Description

Ingredients

For the blue cheese sauce:

  • 6 ounces blue cheese, crumbled by hand
  • ¾ cup buttermilk
  • 1 tablespoon fresh chopped chives or parsley
  • ¼ cup sour cream
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon garlic paste
  • Kosher salt & fresh ground black pepper- to taste

For the potato wedges:

  • 3 lbs russet potatoes, cleaned (pat dry) & sliced into wedges
  • ¼ cup duck fat, melted (or melted butter as sub)
  • 2 tablespoons Creole Cajun Seasoning– homemade or store-bought, plus more for serving
  • 1 tablespoon baking powder (or cornstarch/potato starch)
  • Kosher salt & fresh ground black pepper- to taste
  • 1 tablespoon fresh chopped chives or parsley, for garnishing- optional


Instructions

  1. Make the blue cheese sauce. In a bowl or mason jar, combine the blue cheese crumbles, buttermilk, chopped herbs, sour cream, worcestershire sauce, garlic paste, and salt/pepper- to taste. Give the sauce a taste test and adjust with more salt/pepper, as needed. Cover the sauce and transfer it to the refrigerator for the flavors to meld.
  2. Preheat the oven to 425°F and line a large baking sheet with foil or parchment paper, and then top with a fitted wire rack.
  3. Prep the potato wedges. In a large bowl, combine the potato wedges, melted duck fat, Cajun seasoning, baking powder, and salt/pepper- to taste. Use your hands (fitted with disposable gloves if desired) to toss the potato wedges with the mixture very well until the surfaces are fully coated. Then arrange the potato wedges on the prepared baking sheet fitted with a wire rack.
  4. Bake the potato wedges at 425°F for 40 minutes or until the wedges are fork-tender and crispy.
  5. Finish & serve. When the potatoes are done roasting, place them into a large bowl and sprinkle the wedges with more Cajun seasoning to preference, tossing well to coat. Then transfer the wedges to a serving platter, garnish with fresh chopped herbs (if desired), and serve immediately alongside the blue cheese sauce for dipping. Enjoy!
