Yes, yes, yessss! You heard it right:
Curry Chicken Lettuce Wraps, y’all!!!
I keep asking myself why I haven’t developed this recipe sooner but it’s all good because it led us here to this very moment. Being West Indian myself, (huge shout out to the Virgin Islands!) Caribbean-inspired recipes are always my favorite for so many reasons. I love the commonly found flavors from the Islands like curry, jerk, thyme, coconut, and scotch bonnet peppers, to name a few.

There is so much depth and flavor in these curry chicken lettuce wraps! Also, I love how there’s a bit of a cross-culture, Asian meets the Islands kind of vibe here too. Great powerhouse flavor comes from the curry (obvi), onion, garlic, fresh thyme, tomato paste, scallions, and more! Furthermore, these wraps are so easy to make as an appetizer or you can enjoy them as a simple light meal. You do you, boo. Regardless, these lettuce wraps are sure to do you right!
How To Make These Curry Chicken Lettuce Wraps:
- Brown ground chicken in a large skillet, breaking up meat with a wooden spatula.
- Add in onions, garlic, fresh thyme, and continue cooking.
- Stir in tomato paste until just combined with ground chicken.
- Season meat with salt/pepper, cumin, and curry powder.
- Reduce heat to medium-low, and add in chopped scallions.
- Assemble wraps together by placing ground meat on top of butter lettuce cups.
- Garnish with cabbage slaw, more scallions, and/or pair with your favorite sauce, if desired!
Can I Substitute The Meat?
Yes! Feel free to use ground turkey, ground pork, ground beef, and even tofu also works well here.
What To Serve With These Curry Chicken Lettuce Wraps:
Pretty much anything your heart desires…but I’d recommend serving these curry chicken lettuce wraps alongside some rice, mashed potatoes, noodles, roasted vegetables; and be sure to peep my maple roasted brussels sprouts, and these ginger beef and onion rice bowls, too!
What Kind Of Lettuce For Lettuce Wraps?
While there are many types of lettuce to use for lettuce wraps, *butter lettuce* tends to be the best kind of lettuce for lettuce wraps. Butter lettuce is a type of lettuce that also includes Boston and Bibb lettuce. You might also find it to be named hydroponic butter lettuce. It’s usually round in size, has sort of a budding flower-like shape, and has smooth loose leaves.

Ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 lb ground chicken
- 1/2 cup onion, finely chopped
- 2 garlic cloves, finely minced
- 4 sprigs of fresh thyme, stems removed
- 1 tablespoon tomato paste
- 1/2 teaspoon cumin
- 2 tablespoons Jamaican curry powder
- salt/pepper, to taste
- 4 scallions (about 1/4 cup) chopped
- Butter Lettuce, for serving
- Optional: coleslaw/cabbage mix and more scallions, for garnish
Instructions
- In a large skillet over medium-high heat, warm butter and olive oil. Brown ground chicken, breaking up meat with a wooden spatula, about 6-7 minutes.
- Add in onion, garlic, and fresh thyme. Continue cooking until onion softens and becomes translucent, about 2-3 minutes.
- Stir in tomato paste until it fully combines with ground chicken mixture.
- Season meat with cumin, curry powder, and salt/pepper. Stir together until everything is fully incorporated.
- Reduce heat to medium-low, add in chopped scallions, and continue cooking for another 2-3 minutes.
- Spoon mixture onto lettuce cups, garnish with desired toppings, and enjoy!
Notes
- Since ground chicken is so lean and can dry out quickly, more fat: oil or butter, may be needed. If needed, add in a tablespoon at a time until desired consistency is reached.
