Happy month of April, peeps! Spring season has officially entered the chat, Easter is approaching, and the pollen is, well, pollen-ing- ha! I’ve been enjoying this time of year and delving into all things gardening, testing up some seasonal grub, and much more. I’ve also been tapped into March Madness and glued to all things women’s basketball, everyone watches women’s sports ya know!
Anyway, I’m bursting at the seams to share a slew of recipes with you. The month of April and beyond is lookin’ real delicious, y’all. Fun desserts/sweet thangs, scrumptious eats, and refreshing drinks! Now let’s get into one of my most requested, family-favorite recipes…

Baked Cajun Dirty Rice 😮💨
Ain’t a thing like Cajun-style dirty rice. It’s a type of rice that’s locked and loaded with big-time flavor and decadence! This rice contains super hearty ingredients like ground beef, andouille, sautéed veggies, spices, and more. Nah, this isn’t an ordinary, run-of-the-mill type of rice dish. The texture, the flavors, and the richness of it all make this one heck of a side item offering or a main dish that everyone will swoon over!

Ingredients You’ll Need For This Recipe:

- Olive oil: For sautéing the veggies.
- Veggies: The Cajun “holy trinity” involves onion, celery, and bell pepper.
- Andouille: This smoked sausage packs a ton of flavor and is so delicious!
- Ground beef: In addition to andouille, ground beef provides more filling savoriness and further plays on the “dirty” element of signature dirty rice.
- Spices: My Creole Cajun seasoning is a holy grail staple over this way! This well-rounded spice is clutch because of its zesty, bold flavoring and all you need for this rice recipe. Make my homemade version or use store-bought Cajun seasoning if you’d like!
- Garlic & tomato paste: Flavor boosters for depth.
- Cane syrup: To enhance the flavor and give a bit of contrast.
- Rice: I use long-grain parboiled rice for this baked dirty rice.
- Chicken broth: The necessary liquid for boosting the flavor and cooking up the rice to achieve a tender, fluffy overall rice texture.


How To Make Baked Cajun Dirty Rice:

For starters, this recipe is straightforward and promises flawless results…
- Preheat the oven to 350°F.
- We’ll start with sautéing the veggies until tender. Next, add the andouille and ground beef, cooking until browned. Then season the mixture with Cajun seasoning. Stir in the garlic + tomato paste along with the syrup until combined with the other ingredients.
- Add the rinsed rice and broth and stir all ingredients.
- Cover and bake the rice in the oven until cooked through.
- Fluff the dirty rice and enjoy every bite, y’all! 🙌🏾

Why Is It Called Dirty Rice? 🤔
A lot of traditional dirty rice recipes use organ meats like gizzards, chicken livers, and other meats that, when cooked up with the rice, impart a colored appearance. The rice soaks up the different flavors and ingredients that color the rice with a beautiful, dark hue…hence the name “dirty.”
With its state of origin being Louisiana, dirty rice is also simply referred to as Cajun rice or rice dressing as well.

Recipe Tips + Tricks & More Notes
Here’s some more info on this dirty rice recipe I thought you might need…
- Parboiled rice. This is a type of rice that has been partially cooked while still in its husk, it’s also known as converted rice.
- Rinse your rice! Please do not skip this step, friends. Rinsing the rice ensures that we remove as much starch from the rice as possible. This results in perfect, fluffy rice grains instead of sticky/mushy rice, I’d hate that for you.
- Baked rice vs stovetop rice. I am a huge proponent of baked rice, I love it sooo much. Baking your rice as opposed to cooking via the stovetop has a ton of benefits. Baked rice cooks more evenly and at a better rate. Stovetop rice can sometimes yield issues like a scorched bottom which is like a dagger to the soul lol. This dirty rice recipe bakes up perfectly in the oven and yields flawless results! 👌🏾
- Cane syrup sub: If you don’t have access to cane syrup, dark corn syrup is a great substitute.

Description
This baked Cajun Dirty Rice recipe is brimming with heartiness, and flavor, and is so easy to make with flawless results! It’s the perfect, complimentary rice recipe to go alongside your favorite main entrees!
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 1 stalk celery, diced
- 1 green bell pepper, diced
- 12 ounces andouille sausage, diced
- 1 lb ground beef (we use 93%)
- 2 tablespoons Creole Cajun Seasoning– homemade or store-bought
- 1 tablespoon garlic paste
- 1 tablespoon tomato paste
- 1 tablespoon Steen’s pure cane syrup– (or dark corn syrup as sub)
- 2 cups uncooked long grain parboiled rice, rinsed until the water runs clear!
- 2 cups chicken broth
- Fresh chopped parsley, for garnish- optional
Instructions
- Preheat the oven to 350°F.
- Prep the rice: Rinse the rice until the water runs clear. I like to place the rice into a large bowl, fill it with cool water, and then gently swish the rice around. Be careful not to aggressively handle the rice to not break the rice grains. Drain the water and repeat this process about 6 times to remove as much surface starch as possible. Then drain all water and set the rinsed rice aside until called for in the recipe, below.
- Heat the oil in a large, deep oven-safe braiser (or dutch oven) over medium-high heat. When hot, add the onion, celery, and bell pepper and sauté the trinity mixture, stirring often until tender and golden, about 4-5 minutes.
- Add the andouille and continue cooking along with the trinity mixture until the sausage is golden brown, stirring often, about 2-3 minutes. Push the sausage/veggie mixture over to one side of the pan and then add the ground beef. Use a wooden utensil to break up the beef and stir everything well to combine, cooking until the beef is browned, about 4-5 minutes. Season the mixture with Cajun seasoning and stir well to fully combine. Reduce the heat to medium/medium-low as needed if things are browning too quickly.
- Stir in the garlic + tomato paste along with the syrup and continue cooking until the paste is dissolved and fragrant, about 1 minute.
- Over medium heat, add the rinsed rice into the pot, stirring well to coat with the other ingredients. Let the rice toast up in the mixture for 1-2 minutes, stirring often. Then pour in the broth and stir until fully incorporated. Remove the pan from heat and tent the pan with foil covering tightly.
- Bake the rice for 30 minutes at 350°F. Then remove the foil and continue baking for another 10-15 minutes until the rice is tender and lightly toasted.
- Remove the rice from the oven and let the rice sit, undisturbed, for at least 10 minutes. Afterward, use a fork to fluff the rice. Taste the rice and season with more Creole Cajun seasoning to preference, if needed. Serve the Cajun dirty rice immediately with a garnish of chopped parsley, if desired, as-is or alongside your favorite main entree. Enjoy!
