No, seriously, are you absolutely in love with all of yourself? I’m not.
And quite frankly, I’m not afraid to admit that. You see, I’ve neglected myself for many years. So much so that I’ve forgotten who I was, what I loved in life, goals/ambitions that I wanted to go after and so much more. Because of past relationships, self-esteem issues, and a lot more; I began to lose myself.
I allowed myself to stay in extremely toxic situations that weren’t good for my mental health nor were they good for my overall well-being. I allowed myself to engage with people that made me feel even worse about myself. As I previously mentioned here; sometimes we become complacent in life and settle or fail to realize our own worth. I stopped loving myself when I felt like there was nothing to love about me.
Looking back, it’s terrible to think of but it’s helped me get to really know myself better. For the first time in years, I’m focusing on myself. Now for some people, focusing on themselves comes easily. Not for me. I often think of others before myself. It’s both a blessing and a curse.
One of the best decisions I’ve made thus far in my life has been to leave unhealthy situations behind. Since I’ve done that, I started to notice a change in myself and so have others. I don’t know where exactly life will take me but I’m certain that I will head into my future with a newfound love for myself. I absolutely love taking myself out for dinner or a movie. I enjoy taking on new adventures that I always made excuses not to do before. I’m gaining a new sense of self and I never realized the very importance of that.
I write all of this in hopes of inspiring someone going through a similar situation. Never let anyone or anything steal your happiness and make you lose yourself. Love yourself so much that you reject anything that isn’t good for you.
The other day I finally got a waffle maker and quickly put it to work with these easy vegan pumpkin waffles. And no, I’m not vegan by any means but I do like to eat vegan from time to time. What I love most about these waffles is how light and fluffy they are. I ain’t gonna lie, I was a bit skeptical about vegan waffles until I started experimenting. You know how we all can have preconceived notions about something? Yup, I was totally judging vegan waffles. But then I nailed it with these babies!

Easy Vegan Pumpkin Waffles

Description
These EASY, 1- bowl, Vegan Pumpkin Waffles are incredibly delicious and have just the right amount of pumpkin flavors and spices!
Ingredients
- 1/4 cup pumpkin puree
- 1 tbsp coconut oil, melted.
- 1 tsp pure vanilla extract
- 2 tsp sugar
- 1 cup all-purpose flour, sifted.
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp pumpkin spice
- 1 cup almond milk
- *Optional: cacao nibs
Instructions
- In a large bowl, combine pumpkin puree, oil, vanilla extract, sugar, sifted flour, baking powder, salt, pumpkin spice, and milk.
- Slowly whisk all ingredients until fully combined but careful not to over mix.
- Heat waffle maker on medium-high heat.
- Lightly spray waffle maker with oil (I used coconut oil spray).
- Using a ladle, pour batter into waffle maker and cook for 5 minutes (more or less depending on waffle maker).
- Repeat until all batter is cooked.
- Enjoy waffles with maple syrup and desired toppings.

Exactly like you said, easy & delicious! Fluffy without having to fold in any whipped egg whites but still has that crispiness on the outside! We doubled it for breakfast and it was perfect for 2 adults and 2 kids.
