The other day I got a chance to rest/relax and just hang with my favorite peeps and not do so much. And man, did that feel good. Sometimes, hell, most times it always feels like I’m going a mile a minute. Often times it can get overwhelming with my full-time job, this blog, and life in general. I start to feel burnt out and whenever I get that feeling, it makes me wanna pull back and away from everything and everyone. You know that saying about not being able to pour into others if you’re on empty yourself? Yup, I’m beginning to feel that on a whole other level. Sigh.

It’s so important to take care of yourself and your mental health. Whether it’s a spa day, cooking a nice meal, going to therapy, or going to see a movie by yourself or with friends- do it. So that’s where I’m at. I’m trying to take time here and there to do for me way before I get to that overwhelming feeling. I’ll be honest, sometimes it’s easier said than done but progress over perfection. I’ve decided to plan a little getaway soon and I’m excited to be in another location, away from it all, and reset. Traveling always does me good, clears my head, and gives me some inspiration.

I’m putting this out into the open because sometimes we tend to see people over social media and bloggers/influencers and think that they don’t experience challenging times. I’m no different than anyone and I’ve most definitely gone through some very tough times and find myself mulling through it all like the next person. We’re all just getting through life together the best way we can, right? Being in the kitchen most certainly reduces stress and anxiety for me. I’m so grateful for being able to head to the grocery store and pick up some ingredients and get to work in the kitchen.

I’m extra proud of this cookie butter swirled banana bread, y’all. As in proud like a parent when their baby takes its first step, proud. I am a huuuuuuuuge fan of cookie butter. Almost every time I catch a flight I make sure to get those biscoff cookies while in the air. Cookie butter is basically that type of cookie crushed into a very refined way that makes it into a spreadable butter.

It is glorious and I put it on everything. Such as toast, bagels, apples, and now, banana bread. I was in the kitchen recently and got an idea to combine the two so I tested it out. I’ve made this cookie butter swirled banana bread so many times and each batch was absolutely amazing. The cookie butter is sandwiched in between  the banana bread and drizzled on top too for good measure. The banana bread is flavorful and moist with some crunch from the walnuts as well.

Ingredients

Scale
  • 3 extra ripe bananas
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp kosher salt
  • 1/2 cup (1 stick) unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream, room temperature
  • 1/2 cup walnuts, roughly chopped
  • 3 tbsp cookie butter, melted and slightly cooled, plus more for drizzling

Instructions

  1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan with butter or baking spray. Line the bottom with parchment paper and let the sides hang over about an inch for easy lifting. Butter/spray bottom and sides of parchment paper. Set aside.
  2. In a medium bowl, mash up the bananas. In another bowl, sift together the flour, baking soda, and salt.
  3. In the bowl of an electric mixer, fitted with the paddle attachment, beat the butter and sugar together until light and fluffy, about 3-4 minutes. Add in eggs, one at a time until fully combined. Add in mashed bananas.
  4. Reduce speed to low and alternate adding in flour mixture with the sour cream, beginning and ending with the flour mixture (3 additions of flour, 2 additions of sour cream). Be sure to stop and scrape bowl as needed. Beat until smooth and fully combined. Fold in chopped walnuts with a spatula.
  5. Pour half of the batter into the prepared loaf pan and drizzle melted cookie butter directly on top. Then pour remaining batter on top of cookie butter.
  6. Bake until a toothpick inserted comes out clean, about 1 hour and 15 minutes. Let cool in loaf pan for 10 minutes and then invert onto a rack, removing parchment paper. Drizzle more melted cookie butter on top. Cut into slices and enjoy!

Notes

Feel free to use your favorite nut butter as an alternate.
I typically buy my cookie butter at Trader Joes but you should be able to find it at any local grocery store.
Cookie butter can be melted in the microwave in a microwave safe dish.
