Creamy Chicken Parmesan Gnocchi
This ONE-POT creamy chicken parmesan gnocchi with spinach and sun-dried tomatoes is a real weeknight dinner winner. It’s super easy to make, incredibly flavorful, delicious and also comes together in under 30 minutes!

The truth is…I make a lot of food.
Some foods are quick and easy and then other foods require some more work involved. But when I review the stats on my site and check out which recipe blog posts perform better than others; it’s always one-bowl OR one-pot recipes that tend to rank a tad bit higher. And I absolutely feel you.
Take this one-pot casarecce pasta for example, it’s a crowd favorite. Minimal prep work, not a ton of ingredients, and using as little dishes as possible is where it’s at when it comes to getting a good meal on the table, right?
Well then, I think you’ll love this creamy chicken parmesan gnocchi, boo. When I tell you that there is little prep work involved AND that it’ll be ready faster than you can sit down to watch a full episode of The Real Housewives, I ain’t lying. And I’m seriously speaking from experience, ha! And btw, which cast is your favorite? Like, I really wanna know.
While this dish can be made with a quickness, it certainly has that restaurant quality vibe to it, don’t get it twisted. Pillowy soft gnocchi, flavorful chicken, delicious sun-dried tomatoes and spinach, heaps of parmesan cheese; and then all of that gets lathered up in a damn good creamy sauce…AND made in one-pot? Umm, Jesus take the wheel!
Creamy Chicken Parmesan Gnocchi Ingredients:
- Chicken: For this recipe, I’m using a store-bought rotisserie chicken. They’re usually found in the deli area of your local grocer and you can grab a hot or cold one. Then just shred up the entire chicken, using only the meat, discard the chicken skin. Pro-tip: save the chicken carcass to make homemade chicken broth for future use!
- Sun-dried tomatoes: Try to find the ones that are loose and dry and not in an oil-packed jar. If you can’t find them that way, no biggie, just use a paper towel to blot the excess oil that they come in.
- Spinach: this one’s easy, aim to grab at least a 5-ounce carton of it. Most stores have fresh spinach in those nifty containers. It’ll seem like a lot but remember spinach wilts into nothing and you’ll be shocked to see how much goes in and then how little you see of it once it cooks, ha! And it’s totally optional to cut the stems off if you want.
- Gnocchi: store bought pack of 1-pound dried gnocchi will do the trick!
- Parmesan cheese: a fresh block of parmesan cheese that you grate with a handheld box grater or shred in a food processor instead of the pre-shredded kind sold in bags is much better. It gets creamier and tastes even more good.
- Garlic Cloves: 2 of them, please…and minced.
- Butter and Olive Oil: the combination of both are great and used to sauté the garlic until it’s fragrant.
- Heavy Cream: gets everything nice and creamy!
- Chicken Broth: adds more chicken flavor and works with the cream to create a tasty sauce base.
How Do I Make This Creamy Chicken Parmesan Gnocchi Recipe?
Glad you asked…it’s super easy!
Using a large dutch oven or pot, heat the butter and olive oil over medium-low heat. Add in the garlic and let it sauté just enough until it’s fragrant, garlic burns quickly so be careful not to let it sauté for too long. About 1-2 minutes will do just fine. Next, add in cooked shredded rotisserie chicken and give it a stir.
Then add chicken broth, heavy cream, and gnocchi in and continue stirring to combine. The gnocchi will cook through and be done within about 5 minutes or according to package directions. Whew…we’re almost there; add in the sun-dried tomatoes and spinach and stir again to fully combine everything. Once all spinach has wilted, lastly, add in parmesan cheese. Plate creamy chicken parmesan gnocchi and top with more parmesan cheese!

Ingredients
- 1 lb dried potato gnocchi
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 store-bought rotisserie chicken, meat shredded and skin discarded
- 1 cup heavy whipping cream
- 1 cup low-sodium chicken broth
- 1 cup freshly grated parmesan cheese
- 5 ounces fresh spinach
- 1/2 cup sun-dried tomatoes
- salt/pepper, to taste
Instructions
- In a large dutch oven or stock pot, heat butter and olive oil over medium-low heat. Add in minced garlic and stir until garlic is fragrant. Careful not to let burn. Then add in cooked shredded chicken and stir.
- Next, add chicken broth, heavy cream, and gnocchi. Stir to combine and let gnocchi cook for about 3-5 minutes or according to package directions.
- Add in sun-dried tomatoes and spinach. Stir to combine and once all spinach has wilted, add in parmesan cheese and season with salt/pepper, to taste.
- Plate creamy chicken parmesan gnocchi and top with more parmesan cheese, if desired.

I can’t believe this doesn’t have any reviews! I came across your block by way of the Juneteenth cookbook and realized that I already had a few of your recipes in my arsenal. I made this tonight and the only adjustments were using frozen cauliflower gnocchi (cooked in advanced and stirred in at the same place in your directions), and I had two chicken breasts in the freezer so I cooked them in the instant pot while just before I started cooking. Even including that extra step, this was really easy and so good! Will be adding it to my faves.
