How To Make Caramelized Roasted Sweet Potatoes

Sweet potatoes are like water to me, a much-needed necessity for my well-being. Okay, that’s a bit dramatic, but sweet potatoes and I are in a deeply committed relationship. I can’t, I won’t ever come up off of them, ha! On a serious note, I make some sort of sweet potato every single week. And these oven-roasted sweet potatoes are the exact method I’ve been using for years.

Oven Roasted Sweet Potatoes!:
Whether it’s to eat them on their own (or with some type of main/protein) or puree the flesh to make sweet potato pie, waffles, pancakes, or whatever…I hope this post aims to serve you well! 🫶🏾🍠




How To Make Oven Roasted Sweet Potatoes (In Pictures!):

- Preheat the oven to 425°F.
- Line a large baking sheet with parchment paper and spray the parchment paper with nonstick spray. Slice the sweet potatoes in half lengthwise. Then place the sweet potatoes, flesh-side down, on the parchment paper and move around to ensure the flesh is coated in the nonstick spray. Then spray the outer portion of the potatoes again with nonstick spray.
- Bake the sweet potatoes for 45-55 minutes until the sweet potato flesh is fork-tender when checked, and the flesh is caramelized.


- Remove the sweet potatoes from the oven and leave them alone on the baking sheet. Let the roasted sweet potatoes cool down for at least 20 minutes. Then flip them over and enjoy as-is with your favorite toppings/pairings, etc. Ayyeee.

How To Serve Roasted Sweet Potatoes?:
Here are some of my favorite ways to enjoy these oven roasted sweet potatoes:
- As a side– Add some salt/pepper and enjoy them as-is on the side with your favorite main entrees.
- Incorporate it as a main– I often make these sweet potato halves and add a little cooked ground beef with veggies right on top. It comes out like a bowl/boat-style meal, it’s one of my weeknight faves. You can do cooked ground beef, ground chicken/turkey or crumbled tofu, etc….

Ingredients
- 4 medium to large sweet potatoes, cleaned & patted dry
- Nonstick cooking spray
Instructions
- Preheat the oven to 425°F.
- Slice the sweet potatoes in half lengthwise.
- Line a large baking sheet with parchment paper and spray the parchment paper with nonstick spray. Then place the sweet potatoes, flesh-side down, on the parchment paper and move around to ensure the flesh is coated in the nonstick spray. Then spray the outer portion of the potatoes again with nonstick spray.
- Bake the sweet potatoes for 45-55 minutes until the sweet potato flesh is fork-tender when checked, and the flesh is caramelized.
- Remove the sweet potatoes from the oven and leave them alone on the baking sheet. Let the roasted sweet potatoes cool down for at least 20 minutes. Then flip them over and enjoy as-is with your favorite toppings/pairings or scoop out the flesh (pick and discard any extra charred pieces) and transfer into the body of a high-speed blender or food processor to puree until smooth. With the puree, you can make sweet potato pie, sweet potato waffles, sweet potato cinnamon rolls, and much more!
