One-Pot Creamy Beef Pasta
Extra creamy, wildly delicious, and super easy is this one-pot creamy beef pasta. This dish is packed with ample flavor and two different kinds of cheeses…so comforting and weeknight friendly!

Do y’all remember that one signature store-bought boxed one pot pasta situation with hamburger? Yeah, you know: it even claimed to be a huge helper, HAHA. Listen, I use to live off of it when I was a kid and when Mom was out working and I had to fend for myself. There is something so cozy + comforting about it huh.
Given the current climate of the world, we’re all majorly relying on our pantry staples and easy but good homemade cooking. While going through my mess of a pantry/fridge; I put together this insanely delicious, super easy, and creamy one-pot beef pasta. It’s sort of an ode to that favorite I grew up on but homemade and 10x better. Yessss, this creamy beef pasta is outrageously disrespectful in the best kind of way!

Creamy Beef Pasta Ingredients
(Note: the full ingredients list, including measurements, is provided in the recipe card directly below.)
- Pasta: I love using rigatoni pasta for my creamy beef pasta. Since thicker/wider, it holds up to the creamy sauce and meat perfectly. Use any kind of short-cut pasta: elbow, shells, penne, farfalle, orecchiette, etc.
- Chicken Broth: This helps to create a lovely saucy, flavorful, and creamy texture! You can also use beef broth as well.
- Heavy Whipping Cream: I love this for some added creamy goodness.
- Ground Beef: A nice beautiful pound of ground beef.
- Butter: My favorite, this fat is used to sauté the ground beef.
- Shallot: One shallot, finely chopped, yields so much great flavor!
- Spices: Super simple: salt/pepper/garlic powder is all that you need.
- Cheese: Two kinds for ultimate deliciousness! One 8-ounce bag of shredded sharp cheddar cheese (you can use either orange or white cheddar or a mixed bag of both!) and one cup of freshly grated parmesan cheese.

- 1 lb ground beef (I use grass-fed)
- kosher salt & freshly ground black pepper, to taste
- 1 teaspoon garlic powder
- 1 large shallot, finely chopped
- 1 lb dried short-cut pasta (I use rigatoni)

- 1 cup heavy whipping cream
- 8 ounces sharp white cheddar cheese, shredded
- 1 cup freshly grated parmesan cheese, plus more for topping
Instructions
- In a large stock pot or dutch oven, melt the butter over medium-high heat. Add in the ground beef and use a wooden utensil to break the beef into crumbles. Cook until browned completely, about 6-7 minutes. Then season the beef with salt/pepper- to taste, and garlic powder.

Was an easy recipe to follow and a very delicious meal.
I added mushrooms and used a regular onion as I don’t normally have shallots. At the end, I added some herb and garlic cream cheese to the recipe. I let it sit on the stove for about 20 minutes once everything was all mixed together, as I was worried about how cooked the pasta was going to be, and it was perfect. ( the author answered a comment saying the pasta would absorb the water, and they were right, I even added a little extra hot water as it was cooking because the water was boiling down /absorbing quickly – trust the process!)
It makes a lot! I have a couple containers for the freezer and enough food for several more meals.
I really enjoyed it! Definitely comfort food, and relatively quick and simple to put together. I’m actually thinking it might be something I could throw into a slow cooker, but it was done in about 30 minutes, so it’s even quick enough for a night when you have no energy / little time. I bet it would be good with broccoli ( for added veggie content) as well as some nicer cheeses to add more flavour
Hi J- I’m so glad you enjoyed this creamy pasta recipe, it’s one of my favorites on the site. This comment and overall review is super helpful and constructive…thanks so much for taking the time to leave these words, I appreciate it! 🙂
This recipe sounds delicious! I want to make it tonight, but I don’t have sharp white cheddar cheese. Can I use mozzarella or something else in place of this?
Hey Katelynn- Sure thing, mozzarella or gruyere/colby would work as well! 🙂
So yummy! I subbed half the cheddar for mozzarella. And my.elbow macaroni took 16 mins to cook. I also added 2 x the amount of garlic powder for flavor. Everyone loved the taste!
We made this last night, only substitution was using an onion instead of a shallot (left in the cart), and it was awesome! So cheesy and the pasta cooked perfectly. My family (4) were all happy and still had some left over for the next days’ lunch. Saving this super easy recipe for another day, but that won’t be long. If you have not tried this and looking for an easy, one-pot meal that your family will love and praise you for, make this. You will not be disappointed!
Hi Kevin- Loving this feedback, so glad you enjoyed this recipe, thanks for taking the time to leave this review! 🙂
I’m gonna try it tonight! One pot comfort food for the family with a side helping of sautéd vegetables
Hey Danny- Nice, hope you guys enjoy the recipe! 🙂
Hello, I I have made this recipe twice now and find that the liquid does not get fully absorbed, even cooking it an additional 20 minutes longer than what you have recommended. Should I use 3 cups of broth instead of 4, or what do you recommend? My family loves this recipe! Thanks
Hi Jillian- Hmmm, yes, you could reduce the broth to 3 cups! 🙂
Just made this recipe and it was deliciouuuuus!
So simple & easy! Was a hit with my sister too!
Thank you for this quick yet yummy dish!
I loved this recipe! I didn’t have Parmesan cheese so I used mozzarella and it came out perfect!
Very good recipe! Picky kids even ate it. I threw in some steamed broccoli. Made for a quick and tasty meal.
I make this now almost weekly for my family, such a hit! It’s easy enough that I can throw it all together after a long work day too! Would love more one pot recipes from you! Thank you thank you!!!
Made it tonight and the family loved it. Adding it to our meal rotations. THANKS!!
I have 3 very picky kiddos who rarely enjoy the same meal, but this was a winner with everyone! I will say we all LOVE cheese, but found this to be a little heavy/too rich when I made it as written the first time. The last two times, I cut the amount of cheddar in half and used about 1/4 cup of parm and we all enjoyed it much more. Very adaptable and is in regular rotation here now. Thank you for sharing! 🙂
Simple and delicious
Made this for my “UCF” son –He said it is good!! Followed the recipe pretty close — added 1/4 cup chopped carrot and 1/4 cup chopped spinich in an effort to get a few vegetables into my family. Also because of other comments, I cut back on the cheese a bit. Thanks — looking forward to trying some of your other recipes.
This was so good! Used an onion as I didn’t have a shallot. Also didn’t have a full cup so used half a cup of heavy cream, half whole milk and half a tsp of flour to thicken it up a bit. Came out perfectly. Thank you!
We love this recipe!! Its so easy and so delicious we use for week night meals but because of it simplicity I also use for when I need to take for friends homes for a meal when they are sick or just had a baby or something like that! I always get rave reviews!
Hey Whitney- I love it, so glad you and others have enjoyed this beef pasta recipe, it’s one of my faves! 🙂
Can I use butter milk?
Hi there- I haven’t tested this recipe using buttermilk so I can’t speak to an outcome with it but lmk if you try! 🙂
I haven’t tried making this yet but I am looking forward to trying it! Can I use spaghetti instead of penne or rigatoni? If so, would I need to change the amount of broth or the cooking time?
Hi Cindy- I only recommend using short cut pasta for this recipe 🙂
Quin, this pasta goes so unimaginably hard it genuinely just ended a day-long argument between my fiance and I. One taste of this dish and we were genuinely both just sitting there in shock like “wow. fighting feels so pointless when we could be eating this instead.” and now everything is okay again. this dish is so good i could die.
Hey Rosemary- Oh wowww lol, I’m so glad to hear that you enjoyed the recipe (& that y’all are back on good terms haha)…thanks for taking the time to drop this review 🙂
I’m making this tonight with elbows and onion, don’t have a shallot. And cream cheese because I dont have heavy cream. My hubby doesn’t like Mac and cheese so I am anxious to see how he likes this! So fast to make!
I made this with a slight variation and it was amazing. I had some truly delicious chuck roast leftover that I had made yesterday for French dip sandwiches along with the jus that it created, so I substituted that for the ground beef and the broth. Other than that, it was made as written, and it was fabulous. Thank you for the recipe. I plan to add some steamed broccoli to the leftovers to round out the dish. I’m sure that will still be as delicious tomorrow as it was today.
Made it – had only cream cheese in lieu of heavy cream – One pot – Loved it !!
Super easy to make and absolutely delicious!!!! My new favorite pasta dish.
I have made this for a few friends and everyone loved it. I can’t believe how easy it is to make.
