With Summer being here, I find myself easily enjoying all the delicious comforts that this season brings. I also love to find new and creative side dishes and appetizers to accompany some of my favorite meals. My usual staples include roasted asparagus, a quick steamed broccoli situation, roasted brussels sprouts; and now this crazy good SPINACH SALAD with chicken and the most amazing honey dijon dressing!

I just love myself a good salad, y’all. Especially a salad that is filling and has ample toppings. And with spinach? YES. Whenever I’m at the market or grocery store, I typically grab a family-size portion of spinach to use for the week. It’s one of my favorite dark leafy greens. I use it for smoothies, to cook with: like in this creamy chicken parmesan gnocchi and this creamy spinach artichoke chicken, and so much more.

Ingredients To Make This Spinach Salad

  • baby spinach
  • grape tomatoes
  • red onion

  • whole almonds
  • Maille Honey Dijon Mustard
  • apple cider vinegar
  • olive oil
  • garlic
  • kosher salt
  • fresh cracked black pepper
  • turmeric
  • chicken breasts

First, this spinach salad is topped with the most simple yet flavorful chicken! I love using my good ole grill pan on the stovetop to quickly “grill” chicken. If you do not have a grill pan or a grill; feel free to regularly pan sear the chicken breasts or you can even bake them! The chicken adds a nice + hearty protein option. However, if you are strictly plant-based, simply omit the chicken altogether or replace with a plant-based protein option. For instance; use items such as tofu, tempeh, chickpeas, seitan, or quinoa.

Next, the chicken is seasoned extra well with basic spices like salt, pepper, and turmeric. Yup, I said turmeric. This wonderful Indian spice is a powerful spice and contains medicinal properties. For example, turmeric contains a compound called curcumin. This main ingredient in turmeric contains anti-inflammatory effects and antioxidants. Thus, giving this salad even more nutritional goodness throughout!

How To Make Honey Dijon Dressing

Above all, this dressing is so easy to make, it’s incredibly flavorful, nice and tangy, creamy, and lip-smackingly delicious! Furthermore, it makes the most perfect accompaniment to this spinach salad.

  1. To make this honey dijon dressing: simply combine the Maille Honey Dijon Mustard, apple cider vinegar, olive oil, garlic, salt/pepper in a small jar. Then, adding in a bit of water helps to thin the dressing out. Give the jar a good shake and now you have the most tasty homemade honey dijon dressing!

How Long Will This Dressing Keep For?

If dressing is kept in an airtight container, this dressing will keep for up to one week in the refrigerator.

Can I Use Alternate Types Of Mustard?

Sure, you can use Maille Dijon Originale (authentic or grainy texture), which Maille also makes, too!

Description

This simple and easy spinach salad with juicy grilled chicken and a tasty honey dijon dressing is so delicious. Packed with extra filling toppings and more! Makes two extra large salads!


Ingredients

Scale
  • 1 lb chicken breasts, grilled/fully cooked
  • kosher salt
  • fresh cracked black pepper
  • 1/2 teaspoon turmeric 
  • 2 tablespoons extra virgin olive oil
  • 5 ounces baby spinach
  • 1/2 small red onion, thinly sliced
  • 1 cup grape tomatoes, sliced into half 
  • 1/3 cup whole almonds
  • 1 small avocado, sliced

Honey Dijon Dressing

  • 1/2 cup Maille Honey Dijon Mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon garlic paste/minced garlic
  • kosher salt
  • fresh cracked black pepper
  • 23 tablespoons water, to thin

Instructions

  1. Season chicken breasts generously with salt/pepper/turmeric. Rub seasonings into chicken. 
  2. In a large pan, heat olive oil over medium-high heat. Cook chicken breasts, about 5-6 minutes on both sides, or until chicken is cooked through completely. Alternative method: you can grill or bake chicken in the oven (bake at 350°F for at least 1 hour). Then set chicken aside.
  3. To make honey dijon dressing: combine the mustard, apple cider vinegar, olive oil, garlic, salt/pepper into a mason jar. Add in a tablespoon of water at a time, to thin out, until desired dressing consistency is reached; about 2-3 tablespoons should do the trick.

Salad Assembly:

  1. Evenly divide spinach among two large salad bowls. Next, top with red onions, tomatoes, almonds, and avocados. Slice chicken breasts and top directly onto salads. Lastly, drizzle honey dijon dressing all over salads and enjoy!

Notes

  1. Honey Dijon Dressing will keep in an airtight container in the refrigerator for up to one week.
